Chocolate Cupcakes

Preparation time:  15 to 30 minutes
These cupcakes are very delicious and really chocolatey and also a little crunchy on the top

Ingredients

1¼ cups plain flour
½ cup sweetened cocoa powder
2 teaspoons baking powder
½ teaspoon salt
1 teaspoon vanilla
½ cup butter
2 eggs
½ cup milk
¾ cup sugar.

Method
Beat butter and sugar until creamy.
Beat in eggs and vanilla.
In a separate bowl sift together flour, cocoa, baking powder and salt.
Add half the flour mixture to the creamed butter, add milk then combine remaining flour.
Spoon mixture into cupcake pan lined with paper cups until cups are ¾ full.
Bake at 180°C for 20-25 minutes, or until an inserted toothpick comes out clean.
Decorate with buttercream frosting

Recipe notes

You can mix some white chocolate chips with the mixture before putting into cups. Makes 12-15 cupcakes..

Making Carrot, Ginger and Sultana Loaf

Preparation time:  15 to 30 minutes
This is a lovely moist loaf, best eaten sliced and buttered. Ideal for ginger lovers. Could substitute dried apicots, pears etc instead of ginger. Keeps and freezes well. Great in lunchboxes too.

 

ngredients

1 cup roughly chopped glace ginger
¾ cup sultanas
250 g grated carrot
1 cup brown sugar, firmly packed
1 teaspoon ground ginger
½ teaspoon mixed spice
1 cup self-raising flour
½ cup plain flour
½ teaspoon baking soda
125 g butter, melted
3 eggs, lightly whisked 

Method
Preheat oven to 165°C (fan-forced).
Grease and line a 10.5 cm x 21 cm loaf tin with baking paper.
Sift flour, spices and baking soda into a large bowl. Add brown sugar and mix well.
Mix in carrot, sultanas and ginger.
Add the eggs and butter and mix well.
Spread into prepared pan and bake for 50-55 minutes.
Allow to rest for 10-15 minutes before turning out onto a rack to cool

Recipe notes

We love this recipe, and although I have never done it I think it would make a great steamed pudding too. If using dried apricots or pears chop up and soak in boiling water for 15 minutes then drain.

Making Pecan Pie

200g sugar [can be white, but brown will give a richer caramelization]
60g butter
1.5g salt
200g eggs
350g corn syrup [can substitute maple syrup or pancake syrup]
8g vanilla extract
142g pecans

blend butter, sugar and salt at low speed
add eggs
add syrup and vanilla and blend well
to assemble, sprikle pecans in shell, and then pour over syrup.
bake at 220C for 10 mins, then reduce heat and bake at 175C for 40-50 mins.
